Make Mini Doughnut Cupcakes on National Doughnut Day!

Are you not much of a doughnut fan? For National Doughnut Day on June 5, don’t settle for something you don’t want. You can make your own mini doughnuts at home in a cupcake tin! Plus, using a pre-made cake mix makes this recipe super easy. Get the best of both worlds by making these Mini Doughnut Cupcakes for National Doughnut Day!

Mini Doughnut Cupcakes

You’ll need:

  • a cupcake tin
  • parchment paper
  • Piping bag or ziplock bag
  • 1 box of cake mix (any flavor you like)
  • 1 can of pre-made frosting (any flavor you like)
  • sprinkles

Directions:

To prepare your cupcake tin, spray it with nonstick cooking spray, as you will not be using cupcake liners. Take long strips of parchment paper and roll them into a tight ball that will sit in the middle of each cupcake tin to make the “hole” of your doughnut. Once you have made a parchment ball for every cupcake space, set aside your pan.

Prepare your cake mix according to package instructions. You may need additional ingredients like eggs, milk, oil or butter. Once your batter is prepared, pour it into a piping bag or ziplock bag (you will need to snip one corner of the ziplock bag when you go to pipe the batter). Use your piping bag to fill your cupcake tins, making sure to keep your ball of parchment paper in the middle of each cupcake, uncovered so that you will get a proper hole in your doughnut. Bake your cupcakes according to package instructions until an inserted toothpick comes out clean. When your cupcakes are cool, carefully remove each cupcake from the tin, and set aside.

Scoop the frosting into a medium-sized microwave-safe bowl. Melt your frosting slightly in the microwave until it is slightly runny, this should only take about 30 seconds. Get ready to frost your doughnuts! Take a mini doughnut cupcake, and remove the parchment paper from the inside of the cupcake. Dip the top side of the cupcake into the frosting just a little to cover the top of the cupcake, do not over dip. Turn your mini doughnut cupcake over and place it on a serving tray. Decorate your cupcake with sprinkles before the icing dries so the sprinkles will stick. You can even decorate with fruit, chopped nuts or edible glitter! Once you have iced and decorated all of the cupcakes, you are done!
